If you're an avid backyard cook, professional pitmaster or a restaurateur, this is the class for you. Instructed by our good friend- Joe Martinez of Smokin' Joe's Pit BBQ!

In our Advanced sausage course, you will learn the art of making sausage. You will learn how to properly cure sausage using curing salts, seasoning calculations, meat to fat ratios, how to grind meat and get the right consistency & how to case sausages. You will also learn how to properly cold smoke sausage and obtain that "snap" people look for. We will be eating the sausages we make and as a bonus, every student will be taking some sausage links home.
This is a hands-on class so be ready to dive in and have fun making sausage.
