COMPETITION BBQ - "THE ROPES" - January 11th - 10AM

Already competing but can’t quite crack the top 10, perhaps you're lacking consistency in your proteins, want to jump into a sanctioned contest (KCBS/CBA/IBCA), still chasing that Grand Championship or maybe just want to up your BBQ game- then please join us at El Paso's 1st Championship Competition BBQ class taught by Pitmaster Chris Webb of Bushmaster BBQ. In this class I will show you the tips and tricks that have helped us become one of the best cooks in the country. Travel anywhere in the country and cook with confidence! Understanding judging - interpreting scores
· Formulate Timelines (At altitude & sea level)
· Wood selection & fire management
· Source, select, trim competition meats
· Inject/brine/season- winning flavor profiles
· Finish/cutting board technique
· Hot hold
· Box building & presentation
Class will convene at 10am and run until 4pm or until every question is answered! Come see how we quickly became one of the hottest, most consistent competition BBQ teams in the country! We will focus on chicken (KCBS/CBA) thighs/wings & (IBCA 1/2 chickens) We look forward to spending our Sunday with you and showing you how to win week in and week out from coast to coast!
